My good friend Taka is one of the nicest people I know. He hosts a potluck dinner my friends and I look forward to going to about every other month or so. He always ends up inviting way to many people, and while I look forward to tasting all the other dishes people bring, I always find myself getting seconds of his huge pot of Japanese curry that without fail will always be simmering throughout the whole night on the stove.
A few months ago, I decided I wanted to make a dish inspired by Taka’s curry. Most recipes I found online are made with butter or with the curry blocks you can buy at the grocery store, but I wanted to test if I could make a home-made vegan version that tasted just as good if not better! I’ve made this recipe dozens and dozens of times since then, it has become a staple because of how versatile (you can sub any veggies, or add meat if you want!), easy, and comforting it is.
