Growing up as a kid we would always go to this restaurant in Chinatown called Busch Gardens. It was my favorite spot because it had japanese style tatami booths (but with legroom), a super ornate fountain in the entrance with faux fish, and Sukiyaki that was served out of a tin bowl that was shaped like a cake form. This soup is japanese home-style cooking that comes with the comfort of Ramen, but minus the stomach ache. Not many places served it and as Seattle has grown over the years, its even harder to find and Busch Gardens has since stopped serving food entirely. The chain smoking chefs from the neighborhood that used to call the bar home have been replaced mostly by 30 year old transplants who rightfully go there for the open Karaoake mic and stiff ass drinks.
This recipe is a mixture of what Busch Garden would serve, but with a little bit of my families revisions from over the years. Add/ subtract veggies/ meat as you see fit. The base is simple enough that it works with anything and always tastes great.
