Nian Gao is traditionally steamed and eaten during Chinese New Year, but my mom always made this baked version all throughout the year when I was young and it was one of my favorite desserts to eat. It has a similar texture to mochi, super chewy and soft but this baked version has a light crust on the top and more flavor. It is super addicting yet ridiculously simple and easy to make and also only has 5 ingredients in it!
